Achiote Marinade

This is a traditional Nicaraguan Marinade made with achiote, a slightly sweet and peppery spice. You can find it in a paste or powder form and both are fine to use in this recipe.



Ingredients:
1 tbs. achiote paste OR 1.5 tbs. achiote powder
1 tbs cider vinegar
1 tbs. worcestershire sauce
1/2 tbs. mustard
1 tsp. kosher salt
1 tsp. sugar
1 tbs. olive oil
1/2 tbs. pepper
2 garlic cloves finely diced

Directions:
1. Mix all the ingredients together

2. Spred mixture on chicken or pork, let sit at least 30 minutes but ideally overnight

3. Saute in a pan or barbecue on a grill

    I made the Confetti salad and chicken with tomatoes and basil last week. Both were delicious! My mother never put salt on food by the time I came along. It really makes a difference.

    I'm set to make tuna patties on Friday.
