Tuna Patties

This is a recipe that Oscar loves since childhood. A quick and inexpensive meal and practical for those who practice lent!

Ingredients:
1 (5 oz) can of tuna in water, drained
1/4 cup plan bread crumbs
1 tsp. worcester sauce
1 tsp. mustard
1 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup celery finely diced (half stalk)
1/4 cup onion finely diced
1 tbs. red pepper finely diced
1 potatoe cooked and finely diced (about 1/2 cup)
1 egg, slightly beaten

Oil for frying
1/2 cup bread crumbs to form patties

Directions:
1. Drain canned tuna and place in mixing bowl. Mix all ingredients together

2. When well mixed divide into 4 and form patties
3. Patties will feel soft, so we coat them in breadcrumbs to firm them up
4. Heat oil and dry until golden brown

Enjoy with a salad or on a hamburger bun

  1. Perfect for Lent! Do you think I could use the "chunk light"? Do you think it would fall apart too easily? We don't eat the albacore anymore because of the mercury content.
