Chicken with onions, tomatoes, and basil
A one pot dish that can be made in under 30 minutes. A classic quick fix when you're in a tight spot! Sarah and Oscar love this one...
Serves 2-4 persons
Ingredients:
2 chicken breasts, each cut in half vertically to make thinner
1 garlic clove, finely diced
1 medium white onion (1/2 cup), diced
1 15.5 oz can diced tomatoes with juice, OR 2 cups fresh tomatoes diced
2 tbs. olive oil
1 tsp. basil
Salt
Pepper
Directions:
1. Heat oil in a deep skillet, saute chicken to light brown (chicken will not be fully cooked at this time)
2. Once chicken is brown, leave on a plate and continue preparing the sauce.
3. In the same skillet add onions, more oil if needed, and season with salt and pepper.
4. After around 3 minutes add garlic and saute for 1 minute

5. Add tomatoes to skillet, mix all ingredients and add basil.
6. Reintroduce chicken with the other ingredients including its juices.
7. Cover and let it cook on medium-low heat for 5-6 minutes, until chicken is fully cooked/
Serve chicken over pasta or with side of rice
