Red Curry and Coconut Milk Soup
Delicious dish that is simple, and flavorful and always a favorite. I'm trying to get through these requests that Oscar and Sarah sent me! Try this one, I know you'll enjoy it!
Ingredients:
2 tbs. oil
1/2 onion, chopped
1 garlic clove, chopped
3 green onions, chopped
1 tbs. red curry powder
1 tbs. ginger, shredded
4 cups chicken stock OR water and bullion cube
1 can coconut milk
1 bag of brocolli slaw
1 lb. linguine
1/4 cup half and half OR whipping cream
1 cup crushed tomatoes OR 3 oz. tomato paste
1 chicken breast thinly sliced
salt & pepper
Directions:
1. Heat a large pot with oil.
2. Add onions and saute for a couple of minutes, then add garlic and cook until fragrant.
3. Add dry spices, ginger, and tomatoes/tomato paste.
4. Stir for 1/2 a minute and add chicken stock or water.
5. Add coconut milk and 1/4 cup of half and half.
6. Add Broccoli and green onions, bring to boil until broccoli slaw is soft (around 7 minutes).
7. Add cooked chicken, cook for 5 more minutes.
8. Serve on top of cooked pasta.

ReplyDeleteBroccoli slaw is a bag of pre-cut vegetables they sell at any supermarket. Sort of like a cole-slaw mix, but with a different vegetable mix. I'll put up a picture of it so you can see!

ReplyDeleteIs it "1/4 cup half and half" of milk? I don't really know what whipping cream is. Looks good I'm going to buy the ingredients and make this on Sunday! :)
