Skillet Plantains
A quick version of the classic plantain recipe.
Ingredients:
For 2 persons
1 plantain (yellow and ripe)
1/2 tbs. butter
1/2 tbs olive oil
1 tbs. sugar
1/8 tsp. ground cinnamon
1/4 cup water
The Plantain Explanation:
Plantains look like a large relative of the smaller, sweet banana but are a different animal altogether. They are a lot less sweet, but similarly to sweet bananas they are green when unripe, and yellow-brown when ripe. This recipe requires yellow-brown plantains. You can find a green one and wait a few days till it turns yellow-brown.
Directions:
1. Peel the plantain and cut into quarters.

2. Heat up a medium non-stick skillet on medium heat. Add butter and oil to pan.
3. When butter is melted add the quartered plantains and cook for 2-3 minutes on each side until golden brown.
4. Add sugar, cinnamon, and water. Put heat to low for around 5 minutes until water condenses into honey-like consistency.
