A quick Cucumber Salad

This one on special request by Oscar, I'm sure he knows the recipe but he loves it. Great quick snack or light side dish.

Ingredients:
2 med. cucumbers, peeled, and seeds removed*
1/4 red onions, finely chopped
1/2 lemon or lime
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. sugar
1/3 cup reduced fat sour cream or yogurt
1/4 cup chopped herbs (cilantro, dill, or parsley)

Directions:
1. Peel, seed and chop cucumbers.

2. Add to bowl with finely chopped red onions.

3. Mix in the rest of the ingredients. Add herbs when ready to serve.

*If using English or seedless cucumber, use only 1 and there is no need to peel or seed.

  2. Jill made the salad on Friday. It was delicious and easy to make. We used yogurt and cilantro. Great flavor and low in cal. Greek yogurt has similar consistency to sour cream but less cal and more protein.
