So it begins...with RICE

Mama's ever popular rice recipe. While most of the time rice is boring, and sticky this is a great recipe for a fluffy, flavorful dish.


Ingredients:
2 cups rice
3 cups water
2 tbs vegetable oil
1/4 cup red pepper
1/4 cup green pepper
1/4 cup chopped onions
1/2 lemon
1/2 tbs salt



Directions:
1. Wash rice in strainer until the water runs out clear.

2. Let the rice strainer sit on paper towels. Cut onions and peppers to desired size and place in strainer with rice.

3. Heat the skillet on 'Medium High' heat (heavy bottom pans are preferred for an even cooking of the rice) with vegetable oil. Once the oil is hot add the rice, peppers, and onions while stirring.

4. Fry rice for 5 minutes and add water, salt, and squeeze the lemon.

5. Let the water come to a boil until the edge of the water meets the edge of the rice. Put the heat to 'Low' and cover for 10 minutes.

    Hi Mrs. Mayorga! I made your special rice but used brown rice instead and it came out really well. It takes longer to cook with brown rice but it was delicious. Thanks for the recipe! :)
