Fish Pockets

Great, quick, simple dish that's as healthy as it is tasty.

Ingredients:
3/4 cups of cooked rice
1 Fish filets (4-6 oz. each...e used tilapia)
1/2 lemon
Red pepper
Red onion
Green onion
Capers
Stuffed green olives
1 tbs. dry vermouth (make sure not to use sweet vermouth. You can also use lemon juice instead)
Dot of butter
Salt
Pepper



This list of ingredients is a suggested list and each pocket can be made with whatever ingredients you enjoy (probably a variety of 3-5 each, unless of course you want all of them). You can also add cilantro, spicy peppers like jalapenos, and dill.


Directions:
1. Cut and prepare all vegetables to be placed in pocket
2. Place rice on top of aluminum foil (1.5-2 ft long), followed by the fish filet, salt, pepper, vegetables, vermouth, and butter.
3. Seal the pocket by folding the edges to create a tight seal.

4. Place on a baking sheet in a pre-heated oven at 375 degrees, for 30 minutes.
5. Open and enjoy

  2. Make sure that you don't use sweet vermouth instead of dry vermouth. The taste won't be the same. We traditionally used lemon juice instead of the vermouth but it might be too acidic for some tastebuds.

  4. perfect for lent! i think i will make in on wednesday and report back. might be cheaper to use lemon juice
