Papas con Crema
This is a Nicaraguan dish that was always part of Sunday breakfast. Great side for some eggs, or anything really!
Ingredients:
4 medium-size potatoes, cubed
1/2 cup onions, chopped
2 plum tomatoes, diced
1/2 tbs. worcestershire sauce
2 tbs. butter
1 cup sour cream
1 tsp. kosher salt
1/2 tsp. pepper
Directions:
1. Boil potatoes until they are fork tender
2. Melt butter in a medium size pot place over medium heat
3. Add onions and saute until translucent
4. Add tomatoes and saute for 3-4 minutes
5. Mix in salt, pepper, sour cream, and worcestershire sauce
6. Stir to combine but do not let boil
7. Pour sauce over cooked, drained potatoes.

8. Let sit for 2-3 minutes and serve

I think this is one of the first dishes I learned to cook. This with gallo pinto is fantastic (as well as a carb overload). I love crema!
