Tuna Patties
This is a recipe that Oscar loves since childhood. A quick and inexpensive meal and practical for those who practice lent!
Ingredients:
1 (5 oz) can of tuna in water, drained
1/4 cup plan bread crumbs
1 tsp. worcester sauce
1 tsp. mustard
1 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/4 cup celery finely diced (half stalk)
1/4 cup onion finely diced
1 tbs. red pepper finely diced
1 potatoe cooked and finely diced (about 1/2 cup)
1 egg, slightly beaten

Oil for frying
1/2 cup bread crumbs to form patties
Directions:
1. Drain canned tuna and place in mixing bowl. Mix all ingredients together

2. When well mixed divide into 4 and form patties
3. Patties will feel soft, so we coat them in breadcrumbs to firm them up
4. Heat oil and dry until golden brown

Perfect for Lent! Do you think I could use the "chunk light"? Do you think it would fall apart too easily? We don't eat the albacore anymore because of the mercury content.
